Bissara, also called "besara" or "bessara", is highly prized during this winter period. This thick soup made from broad beans (very rich in protein and full of potassium and magnesium) or split peas (plant-based proteins) is a healthy and nutritious meal with an authentic taste. "Bissara is a dish that goes back centuries, rooted in the culinary traditions of the rural populations of the Maghreb.
