Saffron Boom: Morocco’s Azilal Region Harvests 1.7 Tons of ’World’s Most Expensive Spice’

In 2023, saffron production in the Azilal region reached 1.7 tons, confirming the boom of this promising crop. This spice, known to be the most expensive in the world, adapts perfectly to the region’s climate and offers farmers a lucrative alternative.
The area dedicated to saffron cultivation now extends over 350 hectares, of which 60 hectares are devoted to organic farming. This environmentally friendly practice responds to the growing demand from consumers for healthy and sustainable products.
More than 1,400 farmers, spread over 14 municipalities, including Ait Bou Oulli, have invested in saffron cultivation, according to Rue20. The altitude of the cultivated lands, located between 900 and 1,800 meters, offers optimal conditions for the growth of this delicate plant.
Since 2019, a saffron cultivation development program, supported by the Moroccan government, has enabled 3,000 farmers to receive saffron bulbs. This initiative aims to improve farmers’ incomes, strengthen the resilience of local agriculture to climate change, and promote sustainable development in the region.
